Use jasmine rice instead of brown rice and use other add-ons like green cabbage, red beans, mushrooms, courgette or cucumber. You can also add chopped walnuts for added crunch and nuttiness.
- Fluff cooled Jasmine rice and set aside.
- In a large wok, saute onion and garlic in olive oil over high heat until soft. add ground beef and cook for 10 minutes. Add beef stock and simmer for another 10 minutes.
- Add bell pepper, chili powder, purple cabbage, tomatoes, sugar and taco seasoning then stir in rice. Season well with salt and pepper then fold rice gently for a few minutes
- Fill corn taco cups with rice mixture. Top with diced avocado.
